Abstract

Objective:

Analyses the production and marketing system of gastronomic products from the milpa to identify the economic, social, and cultural implications.

Methodology:

Applied a series of interviews with consumers and producers to identify the economic, social, and cultural implications generated from the production, marketing, and consumption of milpa's products.

Results:

There is an evident self-valorisation by producers and consumers; however, the non-existence of a link between both actors and the commercialization process allows the valuation of the gastronomic products of the milpa's are identified. Together with other urban, social, and environmental problems, the prevalence of milpas in the region would be affected in the medium term.

Limitations:

The results of a study focused on the Toluca Valley cannot be generalized.

Conclusions:

Emphasis is placed on a possible valorisation of these products through their incorporation into current contexts and needs.
