Abstract

The effect of two colorants on the reverse spherification of a cocktail model was evaluated. Spheres were obtained from solutions of sodium alginate, sodium alginate + Sunset Yellow dye and sodium alginate + Ponceau Red 4R dye, with proportions of 0.6% m/v of alginate and 1.66% w/v of calcium lactate, being able both colorants to be incorporated up to a concentration of 0.15% w/v. The alginate solutions showed Newtonian behavior with adequate viscosity and can be stored between 4 and 6 ºC for 28 days without affecting the color. The spheres were sensorially evaluated in the ‘Good’ category and the type of dye did not significantly influence the syneresis of the spheres up to 10 min after preparation.
