Abstract

Objective: to analyze the opportunities and challenges of artisanal food production in Magdalena de Kino, Sonora, where food hyper industrialization converges with a multiplicity of social movements focused on building healthier, greener and fairer food alternatives. Methodology: it is based on the theory of food regimes and on the approach of localized agri-food systems; a theoretical-methodological strategy was designed to identify the territorial dynamics around this activity. The perception of producers, consumers and key informants completes the information. Results: the shortage of locally produced raw materials and the lack of social cohesion between production units are the main challenges. However, the attachment to tradition in conjunction with consumer valuation has sustained this industry in the region. Study limitations: the lack of an artisanal food production unit census did not allow obtaining a statistically representative sample; however, the sample does represent its heterogeneity. Conclusions: catapulting artisanal food production requires multisector attention, focused on agro-ecological rehabilitation of primary production; producers’ collective action and the creation of a gastronomic route will strengthen this activity.
