Abstract

Animal protein is basic in the Mexicans diet and the mains sources are the meat of chicken, beef and pig. In 2011, 60 kilograms per person were consumed, and 16.5 kilos was of bovine. To establish and quantify the effect on the Mexican beef market and its main determinants variables an econometric model was designed and estimated with two stages least squares with secondary information for the period 1970-2011. A context of open economy for the beef market was considered, with increasing production cost and loss of participation in the national market. The supply is inelastic to the producer price and the demand is elastic to the consumer price, the import price of meat and grains affects the supply, demand and the foreign trade of balance.
