Abstract

THOME-ORTIZ, Humberto. Agri-food tourism and, new social metabolisms of local products. Rev. Mex. Cienc. Agríc [online]. 2015, vol.6, n.6, pp.1373-1386. ISSN 2007-0934.

Derived from the crisis in agriculture, agri-food tourism is a form of social ownership of the emblematic-food and a farm production restructuring process. From a literature review, contrasted with empirical evidence, a comparison of three scenarios, whose common denominator is the link between food and tourism is done. Cases of the Ruta de la Sal Prehispánica (Puebla, Mexico), Ruta del Nopal (Mexico City) and a proposal of Ancestral Agri-food tourism (Easter Island, Chile) are presented. It is concluded that, the agrui-food tourism is an innovative way of social metabolism of food, involving material and symbolic aspects, which adds value to traditional productive activities, through the incorporation of non-agricultural economic activities. Emphasizing the ambivalent nature of tourism, whose results are guided by social and, economic processes of the areas where this phenomenon is reproduced.
