The beef industry in México suffered an important market loss to other sources of animal protein: its production increased by an average of 5.98 %, consumption by 18.36 % and importations by 151.64%, from 1995/1999 to 2000/2003. Therefore, the objective of this investigation was to identify the principal determinants of the supply and demand of beef carcass in México, considering the influence of the importation price of boneless meat in the domestic market and in the balance of external trade, using monthly data of 1995 to 2003. The price elasticity of the supply was inelastic (0.124) and the demand, elastic ( - 1.66). The analysis of the results of the model predicts that as the price of importation of boneless meat decreases, the national supply is reduced and the demand increases, creating conditions for higher importations, which damaged the national industry and benefitted the consumers.
