FALLAS FALLAS, Javier  e  NUNEZ CORTES, Yajaira. Perspectives on Food Processing and Consumption Through the Analysis of Chemical Residues in Pottery at the Orocú Site, Costa Rica. An. antropol. [online]. 2024, vol.58, n.1, pp.45-59.  Epub 20-Out-2025. ISSN 2448-6221.  https://doi.org/10.22201/iia.24486221e.2024.58.1.84850.

The ancient populations transformed and took advantage of the natural resources available to them to satisfy their basic food needs. Fragments of ceramic containers from the Orocú archaeological site were used to analyze the possible presence and relative abundance of chemical residues (phosphates, carbonates, pH, protein residues, fatty acids and carbohydrates), and thus approximate the food groups that were integrated into cooking, storage and serving practices performed in these containers. Comments are made on the chemical enrichment according to the shape, decoration and functional categories of the ceramic sample studied, this last aspect presents the greatest potential for differentiation in the sample. These analyzes complement the results already obtained from the analysis of organic and inorganic materials found in the domestic contexts of Orocú.

Palavras-chave : chemical enrichment; ceramic function; diet; Nicoya Gulf; Greater Nicoya.
