Abstract
CERVANTES ESCOTO, Fernando; CESIN VARGAS, Alfredo and MAMANI ONO, Isabel. Standard quality of milk in the State of Hidalgo, México. Rev. mex. de cienc. pecuarias [online]. 2013, vol.4, n.1, pp.75-86. ISSN 2448-6698.
In 2010, 419 million 273 thousand liters of milk were produced in the State of Hidalgo, 3.9 % of the national milk output. Three main dairy basins are found in this State, Tizayuca, Tulancingo and Mezquital, and each one of them shows special characteristics which determine, among other issues, marketing channels. The purpose of the present study was to perform a comparison of standard quality milk between basins. As a conclusion, when milk produced in Hidalgo was graded in accordance with international standards, it was found of excellent industrial quality, lacking in hygiene and possibly altered with water. When basins were compared against each other, a basin effect was found.
