In this paper, we propose to analyze the dairy industry through a systemic and a micro-historical approach. We want to answer two major questions: Which was the impact on technological and organizational changes generated by the transnational enterprises (ET) during the nineties and how differed from the previous decade? Which were the strategies of local enterprises, not absorbed by global firms, to stay and compete in the market? We think that the micro-historical approach may offer new clues to understand the transformations experienced by the sector in recent decades. But we think also, that the case studies take a higher explicative dimension when they are realized from a systemic perspective, because this perspective offers an adequate context to make comparisons. An explicit objective of our research was to propose a research track that articulates three dimensions: sector, relations, and enterprise.
