This work addresses the description and rationale, from a theoretical-methodological viewpoint, of the design of a university textbook on instrumental analysis of food. In doing so, both the postulates of the historical-cultural approach and those of the activity theory were taken into consideration, focusing on the teaching-educational task as an integrating element of the content system. The didactic conception of the design also relied on other essential issues, such as the professional approach to the contents, the design of an organizational apparatus of effective assimilation and, finally, the functionality and relevance of the illustrations. A survey across three student samples yielded positive feedback on the book’s contribution to the understanding of the subject contents.
