This article seeks to describe the origin of cattle ranches and analyze their economic structure in the period between 1573 and 1700. The studied area includes two regions (hills and plains), occupied at an early stage in the former jurisdiction of the city of Cordoba, which belonged to the Government of Tucuman and the Viceroyalty of Peru. This contrastive study which observes the constants and variants of the two regions analyzed not only describes the economic changes that occurred in the area as a result of the Spanish conquest and colonization of it, but also attempts to provide general guidelines on the aurochthonous indigenous population's integration into the colonial economic structure of the jurisdiction in Cordoba.
