<self-uri xlink:href="http://www.scielo.org.mx/scielo.php?script=sci_arttext&amp;pid=S2395-91692020000100114&amp;lng=en&amp;nrm=iso"></self-uri><self-uri xlink:href="http://www.scielo.org.mx/scielo.php?script=sci_abstract&amp;pid=S2395-91692020000100114&amp;lng=en&amp;nrm=iso"></self-uri><self-uri xlink:href="http://www.scielo.org.mx/scielo.php?script=sci_pdf&amp;pid=S2395-91692020000100114&amp;lng=en&amp;nrm=iso"></self-uri><abstract abstract-type="short" xml:lang="es"><p><![CDATA[Resumen  Objetivo:  El documento reporta los resultados de un estudio de caso cuyo objetivo fue analizar los factores sociales y familiares que intervienen en el proceso de transferencia de saberes alimentarios tradicionales dentro de la producción de tlayudas en el municipio de Tlalixtac de Cabrera, Oaxaca.  Metodología:  En el estudio se emplearon métodos mixtos que incluyeron la realización de entrevistas semiestructuradas y el levantamiento de una encuesta a 110 productoras.  Resultados:  Se encontró que la elaboración de tlayudas en el municipio ha perdurado a lo largo del tiempo en el marco de un sistema agroalimentario localizado, en el que resulta central la transferencia de un saber-hacer tradicional. Esta &#8220;sistematización&#8221; y &#8220;localización&#8221; salvaguarda un componente cultural, social y simbólico de la actividad productiva frente a shocks externos que afectan contextualmente a los pequeños productores en el estado.  Limitaciones:  No se tuvo acceso a todos los agentes que participan en la cadena de valor.  Conclusiones:  La continuidad de la producción de tlayudas frente a shocks externos que han presionado al sistema sugiere que dicha actividad ha sido reinterpretada como un patrimonio cultural que, en el contexto de la globalización, se convierte en un recurso estratégico para el desarrollo económico, siendo la participación de la mujer fundamental como portadora del patrimonio alimentario que se concreta en un nuevo espacio de consumo.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract  Objective:  The document reports the results of a case study whose objective was to analyze the social and family factors involved in the process of transferring traditional food knowledge within the production of tlayudas in the municipality of Tlalixtac de Cabrera, Oaxaca.  Methodology:  The study used mixed methods that included conducting semi-structured interviews and a survey of 110 producers.  Results:  It was found that the elaboration of tlayudas in the municipality has lasted over time within the framework of a localized agri-food system, in which the transfer of traditional know-how is central. This "systematization" and "location" safeguards a cultural, social and symbolic component of productive activity against external shocks that contextually affect small producers in the state.  Limitations:  There was no access to all agents participating in the value chain.  Conclusions:  The continuity of the production of tlayudas, against external shocks, that have pressed the system suggests that this activity has been reinterpreted as a cultural heritage. This is in the context of globalization, becomes a strategic resource for economic development, being the participation of the fundamental woman as a bearer of the food heritage that takes shape in a new consumption space.]]></p></abstract>
