Se empleó un sistema de freído experimental, las temperaturas del aceite de freídofueron 140°, 160°, 180° y 200°C. Se observó que el uso de alta temperatura del aceite (200°C) generó una mayor deshidratación, mayor absorción de aceite, mayor expansión y porosidad del producto, parámetros quese relacionaron con los cambios morfométricos de la superficie de la muestra, reportando valores de ladimensión fractal normalizada de su textura (FDN) entre 1.160+0.002.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Physicochemical parameters, moisture content, total oil absorbed content, expansion percentage, texture, porosity, and morphometric changes of the surface of wheat flour laminates during frying process were obtained. An experimental frying system was used. Frying oil temperatures were 140°, 160°, 180° and 200°C. It was observed that a frying oil temperature of 200°C generated a highest dehydrated, highest oil absorption,highest expansion and porosity of the final product phenomenon related to morphometric changes on the surface of the sample, with normalized fractal dimension of texture of images (FDN) values between1.160+0.002.]]></p></abstract>

<body><![CDATA[<p align="justify"><font face="verdana" size="2">Se obtuvieron los par&aacute;metros fisicoqu&iacute;micos contenido de humedad, contenido de aceite total, absorbido,porcentaje de expansi&oacute;n, porosidad y cambios morfom&eacute;tricos de la superficie de l&aacute;minas de harina de trigodurante el proceso de fre&iacute;do. Se emple&oacute; un sistema de fre&iacute;do experimental, las temperaturas del aceite de fre&iacute;dofueron 140&deg;, 160&deg;, 180&deg; y 200&deg;C.
