El cultivo de estos hongos puede transformarse en un proceso de bioconversión ecológica al aprovechar residuos agroindustriales como sustrato, además, la revalorización de estos desechos, puede disminuir su impacto al medio ambiente. El objetivo del presente estudio fue evaluar el efecto de diferentes sustratos sobre la cinética enzimática del hongo P. ostreatus durante su periodo de cultivo. Para ello se utilizó paja de trigo combinada con yucca (Yucca filifera), maguey (Agave salmiana) u olote de maíz (Zea mays) a diferentes concentraciones (20, 30 y 40%). La producción enzimática de amilasa, celulasa y xilanasa fue medida cada 7 días durante 35 días. La mayor actividad amilasa y xilanasa se obtuvieron en sustratos compuestos por 50% paja de trigo y 50% yucca, a los 7 y 14 días del desarrollo del hongo, respectivamente. La mayor actividad celulasa fue alcanzada en el sustrato con un contenido de maguey del 50%. Los hongos cultivados utilizando sustratos que contenían olote presentaron los menores rendimientos enzimáticos, sin embargo, en el caso de la amilasa no hubo diferencia estadística significativa (p &#8805; 0.05) con el rendimiento máximo obtenido en los sustratos que contenían yucca y maguey. Los resultados muestran que el comportamiento enzimático durante el periodo de crecimiento de P. ostreatus está estrechamente relacionado con la composición de los sustratos en los que es cultivado, lo que se debe al contenido y disponibilidad de almidón, celulosa, hemicelulosa y lignina. Esto demuestra la dinámica de formación de enzimas extracelulares durante la degradación de residuos agroindustriales utilizados para el crecimiento de P. ostreatus y permite establecer protocolos para la producción de enzimas hidrolíticas.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract The edible mushroom Pleurotus ostreatus has the capacity to produce enzymatic complexes that degrade cellulose, lignocellulose and starch. These enzymes can be applied in several processes within the food, textile and paper industries as well as in the production of biofuels. The cultivation of these mushrooms can be transformed into an ecological bioconversion process by taking advantage of agro-industrial waste as a substrate; thus, contributing to the environmental balance and in turn, conferring them an added value. The aim of the present study was to evaluate the effect of several substrates on the enzymatic kinetics of the mushroom P. ostreatus during its growing period. For this purpose, wheat straw combined with yucca (Yucca filifera), maguey (Agave salmiana) or corn cob (Zea mays) at different proportions (20, 30 and 40%) was used as a substrate for mushroom growth. Amylase, cellulase and xylanase production was measured every 7 days for 35 days. The highest amylase and xylanase activities were obtained in the substrate composed by 50% wheat straw and 50% yucca at 7 and 14 days of mushroom development, respectively. Highest cellulase activity was reached in the substrate with a maguey content of 50%. Mushrooms cultivated in substrates containing corn cob showed the lowest enzymatic yields, however, in the case of amylase production there was no significant statistical difference (p &#8805; 0.05) with the maximum yield obtained in the substrates containing yucca and maguey. It was found that the enzymatic behavior during the growth period of P. ostreatus is closely related to the composition of the substrates in which it is grown, that is, to its content and availability of starch, cellulose, hemicellulose and lignin. The results obtained in enzyme production kinetics provide an insight of the dynamics of extracellular enzyme formation during the degradation of agro-industrial residues used for the growth of P. ostreatus and allow to establish protocols for the production of hydrolytic enzymes.]]></p></abstract>
