This study aimed to assess the variability among soursop fruits grown in four municipalities of the Soconusco region, Chiapas, based on their physical and chemical characteristics, and to propose some materials for fresh consumption or industry use. Twenty-eight trees propagated from seed and approximately 10 years of age were selected at each commercial orchard. Six fruits at physiological maturity were collected from each tree; then they were ripened and some quality characteristics, functional metabolites and antioxidant activity were evaluated. The population showed high variability (between 42 and 135 %) in fruit, pulp, seed and rachis weight, as well as in the chromaticity in pulp and peel, total soluble solids, total sugars and antioxidant activity. The formation of four groups was determined, where groups 1 and 2 (Tapachula and Huehuetán trees) had the fruits with the best productivity characteristics, namely greater weight and fruit size, while the fruits of groups 3 and 4 (Mazatán and Cacahoatán trees) were characterized by better flavor characteristics, a higher contribution of functional metabolites and greater antioxidant activity. Size, nutraceutical properties, peel chromaticity and brightness, sugars content and fruit acidity are important variables that helped to detect variability in soursop fruits.]]></p></abstract>
<abstract abstract-type="short" xml:lang="es"><p><![CDATA[Resumen El fruto de la guanábana es muy apreciado por sus características organolépticas, medicinales y por su diversidad en la industrialización; sin embargo, no existen variedades generadas en México, a pesar de que se cree que hay gran diversidad de esta especie en el país. El objetivo de este trabajo fue evaluar la variabilidad entre frutos de guanábana cultivados en cuatro municipios del Soconusco, Chiapas, a partir de sus características físicas y químicas, y proponer algunos materiales para el consumo en fresco o la industria. Se seleccionaron 28 árboles de huertas comerciales provenientes de semilla con aproximadamente 10 años de edad. De cada árbol se colectaron seis frutos en madurez fisiológica, posteriormente se maduraron y se evaluaron algunas características de calidad, metabolitos funcionales y actividad antioxidante. La población mostró alta variabilidad (entre 42 y 135 %) en el peso de fruto, pulpa, semilla y raquis, así como en la cromaticidad en pulpa y en cáscara, sólidos solubles totales, azúcares totales y actividad antioxidante. Se determinó la formación de cuatro grupos, donde el 1 y 2 (árboles de Tapachula y Huehuetán) tuvieron los frutos con las mejores características de productividad: mayor peso y dimensiones de fruto, mientras que los frutos de los grupos 3 y 4 (árboles de Mazatán y Cacahoatán) se caracterizaron por mejores características de sabor, aporte de metabolitos funcionales y mayor actividad antioxidante. El tamaño, propiedades nutraceúticas, cromaticidad y brillo de cáscara, contenido de azúcares y acidez de fruto son variables importantes que ayudaron a detectar la variabilidad en frutos de guanábana.]]></p></abstract>
