El presente estudio busca diseñar y validar la escala de actitudes hacia el consumo de alimentos ultraprocesados en estudiantes de Ciencias de la Salud. A través de un estudio cuantitativo, no experimental, transversal y explicativo, se encuestaron a 277 estudiantes (65.7% mujeres y 34.3% hombres) con una media de 19.16 años (DE = 1.76). El análisis factorial exploratorio reveló una estructura unifactorial que explicó una varianza total explicada del 81.1%, el análisis factorial confirmatorio demostró el modelo unifactorial hipotetizado donde todos los reactivos presentaron pesos factoriales aceptables (&#955; &gt; 0.84), y la escala demostró un omega de McDonald alto (&#969; = 0.97). Este estudio revela que el presente cuestionario es válido, confiable y útil para la medición de las actitudes del consumo de los alimentos ultraprocesados en estudiantes universitarios de Ciencias de la Salud.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract Ultra-processed foods are products modified with the addition of substances like salt, sugar, and oil, altering their original form. This study aims to design and validate the scale of attitudes towards the consumption of ultra-processed foods in Health Sciences students. Through a quantitative, non-experimental, cross-sectional, and explanatory study, 277 students (65.7% female and 34.3% male) with a mean age of 19.16 years (DE = 1.76) were surveyed. The exploratory factor analysis revealed a one-factor structure explaining a total explained variance of 91.9%, the confirmatory factor analysis demonstrated the hypothesized one-factor model where all items had acceptable factor loadings (&#955; &gt; 0.84), and the scale showed a high McDonald's omega (&#969; = 0.97). This study indicates that the present questionnaire is valid, reliable, and useful to measure attitudes towards the consumption of ultra-processed foods in university students majoring in Health Sciences.]]></p></abstract>
