Metodología:  Se realizaron transectos conversacionales y entrevistas a informantes claves. La información de campo fue triangulada con la obtenida en la revisión de bases de datos y literatura científica sobre el consumo de partes de las plantas y formas de preparación de especies en otras regiones del país y del mundo.  Resultados:  Se identificaron 33 especies con uso comestible desconocido, así como, 14 especies con partes y formas de preparación no reconocidos en el área de estudio.  Limitaciones:  Si bien se trata de un estudio en un contexto particular, éste permite reconocer recursos alimenticios aún disponibles ante una crisis socioambiental.  Conclusiones:  En el contexto local, existen aún recursos alimenticios no identificados por la población, lo cual muestra la necesidad de realizar estudios a nivel local que permitan generar el conocimiento necesario para su eventual incorporación en el diseño de políticas públicas encaminadas a la seguridad alimentaria.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract  Objective:  Identify edible plant species not consumed, as well as parts of plants and forms of preparation of edible species used in other regions, but not recognized by the inhabitants of Las Placetas, Chicontepec, Veracruz.  Methodology:  This requires the realization of conversational transects and key informant interviews. The field information was triangulated with that obtained from the review of databases and scientific literature on the consumption of parts of plants and forms of preparation of species in other regions of the country and the world.  Results:  In total, 33 species with unknown edible use were identified, as well as 14 species with parts of plants and forms of preparation not recognized in the study area.  Limitations:  Although this is a study in a particular context, it expresses the food resources still available in the face of a socio-environmental contingency.  Conclusions:  In the local context, there are still food resources that are not identified by the population, which show the need to carry out studies at the local level to generate the necessary knowledge for their eventual incorporation into the design of public policies aimed at food security.]]></p></abstract>
