Al día de hoy, sigue siendo central en la alimentación moderna por ser un ingrediente clave en la industria agroalimentaria. Frente a estos cambios en el manejo y uso del maíz, se habló de la emergencia de una nueva relación metabólica entre el hombre y esta planta milenaria. La meta del presente artículo es aportar algunos elementos para ilustrar esta afirmación, tomando como ejemplo la producción y los usos del maíz en el ámbito de la industria agroalimentaria.  Metodología:  Para alcanzar el objetivo se llevó a cabo un trabajo exploratorio no exhaustivo, de tipo cualitativo. Se basó, en primer lugar, en la recuperación de los aportes teóricos de Karl Marx sobre el concepto de metabolismo entre hombre y naturaleza, centrando el proceso de trabajo -en general y en su forma específicamente capitalista- como su principal determinante. En segundo lugar, se llevó a cabo el análisis de documentos científicos, económicos e institucionales, y de las estrategias comerciales de grandes grupos pertenecientes a la industria agroalimentaria en México.  Resultados:  El maíz se encuentra hoy en el centro de procesos de trabajo reconfigurados a partir de las necesidades de la industria alimentaria capitalista y basados mayoritariamente en maíz transgénico e importado, procesado a partir de técnicas de fragmentación del grano que permiten la elaboración de productos ultratransformados.  Limitaciones:  No se tomaron en cuenta otros aspectos de la nueva relación hombre-maíz fuera del ámbito de la industria agroalimentaria. Se analizó el papel del maíz en la industria agroalimentaria a partir del estudio de solamente cuatro grandes empresas agroalimentarias. No se consideró la función del maíz en la producción de piensos.  Conclusión:  Los usos del maíz en el marco de la industria agroalimentaria pueden ser buenos elementos, aunque limitados, para ejemplificar la afirmación según la cual se está reconfigurando drásticamente la relación entre el hombre y el maíz.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract  Objective:  For many thousands of years, native corn has been an important material base of Mesoamericans nations, first for being the core of their local food systems. Today, it is still a centerpiece of the modern diet as a key ingredient in the industrial agri-food system. Within the context of these changes, some researchers spoke about the emergence of a new metabolic relationship between men and this age-old plant. The purpose of this paper is to provide some elements to illustrate this statement, taking as an example the production and uses of corn in the context of the agri-food industry.  Methodology:  To that aim, we used a qualitative methodology based, in the first place, on the work of Karl Marx about the labor process as a key element of metabolism between men and nature. In the second place, we analyzed some economical, institutional and scientific documents and the commercial strategies of several corporations belonging to the industrial agri-food system in Mexico.  Results:  Corn is now a key ingredient in several labor processes redesigned from the necessities of capitalist food industry and based on imported transgenic corn, processed by techniques of seed fragmentation in order to elaborate ultra-processed foods.  Limits:  Other aspects of the new man-corn relationship outside the scope of the agri-food industry were not taken into account. The role of corn in the agro-food industry was analyzed from the study of only four large agri-food companies. The role of corn in feed production for animals was not considered.  Conclusion:  The uses of corn in the framework of the agri-food industry can be good elements, albeit limited, to exemplify the statement according to which the relationship between men and corn is being drastically reconfigured.]]></p></abstract>
