<self-uri xlink:href="http://www.scielo.org.mx/scielo.php?script=sci_arttext&amp;pid=S2395-91692021000200104&amp;lng=en&amp;nrm=iso"></self-uri><self-uri xlink:href="http://www.scielo.org.mx/scielo.php?script=sci_abstract&amp;pid=S2395-91692021000200104&amp;lng=en&amp;nrm=iso"></self-uri><self-uri xlink:href="http://www.scielo.org.mx/scielo.php?script=sci_pdf&amp;pid=S2395-91692021000200104&amp;lng=en&amp;nrm=iso"></self-uri><abstract abstract-type="short" xml:lang="es"><p><![CDATA[Resumen  Objetivo:  Analizar la forma en la que los turistas de proximidad se relacionan con los alimentos tradicionales que se ofrecen en los establecimientos alimentarios emblemáticos del Centro Histórico de Quito, Ecuador, principal destino visitado en la ciudad (61%) y cuya visitación a los establecimientos alimentarios es la actividad turística más representativa (79,2%).  Metodología: se desarrolló un estudio de caso simple que integró datos cualitativos y cuantitativos, a partir de entrevistas semiestructuradas a los dueños de los establecimientos emblemáticos de alimentación, agricultores, sector gubernamental y especialistas en alimentos y turismo, además de una encuesta aplicada a 784 turistas.  Resultados:  Los establecimientos alimentarios mantienen, en su oferta, platos tradicionales que atraen al turismo de proximidad, a partir de la nostalgia que evocan en la memoria alimentaria.  Limitaciones:  Se trata de un estudio exploratorio que sólo aborda las interacciones entre oferta y demanda, desde una perspectiva turística patrimonial. Futuras investigaciones deberán explorar aspectos estructurales y funcionales de la patrimonialización de los alimentos emblemáticos, a partir de las interacciones complejas que se producen en la estructura global del turismo culinario.  Conclusiones:  La vinculación de los servicios de alimentación del centro histórico con la cultura alimentaria local es un aspecto clave para la preservación de este patrimonio cultural intangible, a través de la valorización de productos, técnicas y procesos de la cocina tradicional quiteña. La nostalgia, las relaciones de confianza, la arquitectura colonial y la vida cotidiana son aspectos clave en la continuidad del patrimonio alimentario.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract  Objective:  To analyze on the way proximity tourists relate to the traditional food that is offered in the emblematic establishments of the Historic Center of Quito, Ecuador, the main destination visited in the city (61%) and its food establishments are the most representative tourist activity with 79.2%.  Methodology:  A qualitative and quantitative case study was carried out based on semi-structured interviews with the owners of the emblematic food establishments, farmers, government sector and specialists on food and tourism, in addition to a survey applied to 784 tourists.  Results:  The food establishments continue to offer traditional dishes that attract the proximity tourism from the nostalgia they evoke in food memory.  Limitations:  This exploratory study only addresses the interactions between supply and demand. This is from a heritage tourism perspective. Future research should explore structural and functional aspects of heritage, based on the complex interactions that occur in the global structure of culinary tourism.  Conclusions:  The connection between food services in the Historic Center and the local food culture is a key aspect to the preservation and valorization of the products, techniques, and processes of the traditional cuisine of Quito. It is concluded that nostalgia, bonds of trust, colonial architecture and daily life are key aspects in the continuity of the food heritage.]]></p></abstract>
