El objetivo de este estudio fue analizar la calidad de la leche de cabras criollas y la composición proximal de su dieta en dos temporadas del año (seca y lluvia) en un ecosistema semiárido de Baja California Sur, México. Los datos se analizaron mediante un diseño completamente al azar con tres repeticiones. Las muestras de leche se analizaron con equipos MilkoScan® Minor y Fossomatic® Minor, mientras que la composición de las especies vegetales se evaluó mediante métodos estándar de laboratorio. Los resultados en leche entre temporadas mostraron diferencias significativas (p &#8804; 0.05) en el contenido de grasa (4.72%), proteína (3.84%), lactosa (4.55%), sólidos totales (15.66%) y sólidos no grasos (10.45%), siendo mayores durante la temporada de lluvia. La composición proximal de las especies consumidas por las cabras también presentó diferencias significativas en humedad, cenizas, lípidos, fibra cruda y energía, tanto entre temporadas como entre especies. Estos cambios en la dieta se manifestaron en la calidad nutricional de la leche, lo que tiene implicaciones relevantes para la elaboración de productos lácteos artesanales. Se concluye que, la variabilidad estacional en la calidad de la dieta influye directamente en los parámetros fisicoquímicos de la leche caprina siendo mayores en la temporada de lluvia, lo cual puede ser aprovechado por los productores locales para mejorar el valor agregado de sus productos.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract The quality of goat milk in extensive grazing systems is closely related to the biochemical composition of the plant species consumed, which varies seasonally. The objective of this study was to analyze the milk quality of Creole goats and the proximate composition of their diet during two seasons (dry and rainy) in a semi-arid ecosystem in Baja California Sur, Mexico. Data was analyzed using a completely randomized design with three replicates. Milk samples were analyzed using MilkoScan® Minor and Fossomatic® Minor equipment, while plant species composition was assessed using standard laboratory methods. Milk results between seasons showed significant differences (p &#8804; 0.05) in fat (4.72%), protein (3.84%), lactose (4.55%), total solids (15.66%), and non-fat solids (10.45%) content, being higher during the rainy season. The proximate composition of the species consumed by goats also showed significant differences in moisture, ash, lipids, crude fiber, and energy, both between seasons and between species. These dietary changes were shown in the nutritional quality of the milk, which has relevant implications for the production of artisanal dairy products. It is concluded that seasonal variability in diet quality directly influences the physicochemical parameters of goat milk, which are greater during the rainy season. This can be exploited by local producers to improve the added value of their products.]]></p></abstract>
