Los complejos de quitosán yodados en frutos pueden ser una buena alternativa para mejorar la biofortificación, además de aumentar el rendimiento y la calidad del cultivo. Por lo que el objetivo de este trabajo fue evaluar el efecto poscosecha sobre los principales compuestos nutraceúticos (incluyendo antioxidantes) de frutos de melón por efecto de la aplicación de compuestos biofortificantes de yodo en estadios precosecha. Los tratamientos aplicados fueron a base de sales de yoduro de potasio (KI) y yodato de potasio (KIO3), complejo quitosán-KI (CS-KI), complejo de quitosán-KIO3 (CS-KIO3), quitosán como control y agua como testigo absoluto en frutos de melón. Cada tratamiento consistió en dosis de 5 y 25 mg Kg-1 asperjado de manera foliar. Los resultados muestran que la aplicación de complejos de CS-I mantiene la calidad y disminuye la apariencia de deshidratación durante 15 días poscosecha, el contenido de carotenoides en frutos tratados (promedio 446.67 mg 100 mL-1) es mayor en comparación con los frutos control (promedio 230.65 mg 100 mL-1) a los 12 días, el contenido de la vitamina C en frutos tratados (promedio 46.56 g 100 mL-1) es mayor en comparación con los frutos control (promedio 35.93 g 100 mL-1) a los 10 días y la capacidad antioxidante total se mantiene (promedio 44.47 µg EAG mL-1) durante 15 días de almacenamiento, lo que indica la conservación del contenido nutracéutico del melón por hasta 15 días a 25 °C.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract Iodine is an essential element for humans as its deficiency can affect human health. Iodized chitosan complexes in fruits can be a good alternative to improve biofortification, in addition to increasing yield and crop quality. Therefore, objective of this work was to evaluate the postharvest effect on the main nutraceutical compounds (including antioxidants) of melon fruits due to the application of iodine biofortifying compounds in preharvest stages. The treatments applied were based on potassium iodide (KI) and potassium iodate (KIO3) salts, chitosan-KI complex (CS-KI), chitosan-KIO3 complex (CS-KIO3), chitosan as control and water as absolute control on melon fruits. Each treatment consisted of foliar sprayed doses of 5 and 25 mg kg-1. The results show that, the application of CS-I complexes maintains the quality and decreases the appearance of dehydration during 15 days postharvest, the carotenoid content in treated fruits (mean 446.67 mg 100 mL-1) is higher compared to control fruits (average 230.65 mg 100 mL-1) at 10 days, the content of vitamin C in treated fruits (mean 46.56 g 100 mL-1) is higher compared to control fruits (mean 35.93 g 100 mL-1) at 10 days and the total antioxidant capacity is maintained (mean 44.47 µg EAG mL-1) for 15 days of storage, indicating the conservation of nutraceutical content of melon fruits for up to 15 days at 25 °C.]]></p></abstract>
