Objective:  To evaluate the effect of the genotype-environment interaction on the physicochemical characteristics of potato tubers and chips.  Methodology:  Four genotypes (Fianna, Nau, 5-10, and 99-39) were grown in two locations (Metepec and Raíces) and two consecutive years (2012 ad 2013). Internal browning, specific gravity (SG), starch, sugars and phenols were evaluated in tubers, then their effect on chip yield, color and texture was assessed.  Results:  Tubers with higher SG, dry matter, and starch, as well as lower reducing sugars and phenolic content, were produced in Raíces. These characteristics led to a high yield of potato chips with acceptable color and texture. In contrast, zebra chip (ZC) symptoms were observed in tubers grown at lower altitude, at higher temperatures, and at lower precipitation, negatively affecting potato chip quality.  Study limitations:  We hypothesized that the higher altitude and lower temperatures would avoid the prevalence of symptoms of the ZC; however, monitoring of insect vectors and infection by PCR is needed.  Originality:  This is the first study about genotype-environment interaction on end-use tuber quality carried out under experimental conditions where ZC incidence is present.  Conclusions:  Clone 5-10, grown at higher altitudes, can produce tuber with good attributes for processing into chips, French fries, and fresh consumption.]]></p></abstract>
<abstract abstract-type="short" xml:lang="es"><p><![CDATA[Resumen  Introducción:  La calidad de los tubérculos de papa está influenciada por un conjunto de atributos fisicoquímicos que definen su uso final.  Objetivo:  Evaluar el efecto de de la interacción genotipo-ambiente sobre las características fisicoquímicas de los tubérculos y las hojuelas fritas de papa.  Metodología:  Se cultivaron cuatro genotipos (Fianna, Nau, 5-10 y 99-39) en dos localidades (Metepec y Raíces) y dos años consecutivos (2012 y 2013). En los tubérculos se evaluó el manchado interno, la gravedad específica (GE), el almidón, los azúcares y los fenoles totales, posteriormente se evaluó el rendimiento, color y textura de las hojuelas fritas.  Resultados:  En Raíces se produjeron tubérculos con mayor GE, materia seca y almidón, así como con menor contenido de compuestos fenólicos y de azúcares reductores. Estas características propiciaron alto rendimiento en hojuelas fritas con color y textura aceptables. En contraste, se apreciaron síntomas de punta morada de la papa (PMP) en tubérculos cultivados a menor altitud, temperaturas más elevadas y con menos precipitaciones, lo que afectó negativamente la calidad de las hojuelas fritas de papa.  Limitaciones del estudio:  Se planteó la hipótesis de que la mayor altitud y las temperaturas más bajas evitarían los síntomas de la PMP; sin embargo, es necesario el monitoreo del insecto vector y de la infección mediante PCR.  Originalidad:  Es el primer estudio sobre el efecto de la interacción genotipo-ambiente en la calidad de tubérculos y su uso final, realizado en condiciones con incidencia de la PMP.  Conclusiones: El clon 5-10, cultivado en altitudes más altas, puede producir tubérculos con buenos atributos para ser procesados en hojuelas fritas, papas en bastón y consumo en fresco.]]></p></abstract>
