Because of inadequate management, sub-products are thrown to dumpsters, producing methane, one of the main greenhouse gases during their decomposition process, besides being a source of carbon for microorganism proliferation. These sub-products are generated in large volumes at national level, and only is a minimal part reused in the production of low value-added animal feed. Mango fruit sub-products (skin, seed, and pulp adhered to both) constitute from 35 to 60 % of fruit total weight, which have been reported to have an important concentration of bioactive compounds; particularly important are polyphenols, carotenoids, vitamins A, C and E, which could be high value-added ingredients of growing interest in substituting synthetic antioxidants by natural ones. Therefore, the objective of this research was to assess antioxidant activity and concentration of some bioactive compounds of pulping sub-products of three mango cultivars.]]></p></abstract>
<abstract abstract-type="short" xml:lang="es"><p><![CDATA[Resumen: La obtención de un producto agroindustrial conlleva la generación de desechos o subproductos que representan un problema ambiental, ya que no se cuenta con políticas adecuadas para su manejo, son arrojados a los basureros y durante su proceso de descomposición producen metano que es uno de los principales gases de efecto invernadero, además de ser fuente de carbono para la proliferación de microorganismos. Estos subproductos son generados en grandes volúmenes a nivel nacional y sólo una mínima parte es reutilizada en la producción de alimento animal de bajo valor agregado. Los subproductos del procesamiento del fruto del mango (cáscara, semilla y pulpa adherida a ambas) constituyen de un 35 a 60 % del peso total del fruto. Se ha reportado que en estos subproductos existe una importante concentración de compuestos bioactivos, en particular polifenoles, carotenoides, vitaminas A, C y E, los cuales podrían ser un ingrediente de alto valor agregado para la industria alimentaria donde existe un creciente interés en la sustitución de antioxidantes sintéticos por antioxidantes naturales. El objetivo de esta investigación fue evaluar la actividad antioxidante y la concentración de algunos compuestos bioactivos de los subproductos del despulpado de tres cultivares de mango.]]></p></abstract>
