Desde 1930, los residentes locales fabrican un queso artesanal muy apreciado en la región; sin embargo, la leche cruda y el queso nunca han sido analizados por la calidad microbiológica y de higiene del producto final. El objetivo del presente estudio fue evaluar la calidad microbiológica, física y química de la leche cruda utilizada para producir queso, y el queso artesanal producido en las 22 unidades de producción individuales. Se tomaron muestras de queso y leche de las unidades de producción para realizar pruebas microbiológicas. Se realizaron determinaciones físicas y químicas de proteínas, grasas y lactosa utilizando un analizador LACTOSCAN-S. Los resultados del análisis de la leche mostraron un contenido de proteína (33.11 g/L) y grasa (39.89 g/L) dentro de los parámetros de la normatividad. Para la calidad microbiológica de la leche, los resultados del recuento de mesófilos aeróbicos mostraron un cumplimiento del 64 % con las regulaciones; sin embargo, el mismo conteo de mesófilos aeróbicos en las muestras de queso resultó en solo el 4 % de cumplimiento con las regulaciones. No hubo detección de Salmonella spp. o Listeria monocytogenes en cualquiera de las muestras de leche o de queso probadas. Se deben incorporar buenas prácticas sanitarias y de fabricación para mejorar la calidad sanitaria y de higiene para la producción de queso artesanal en la comunidad de Ojos Negros.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract The community of Ojos Negros is located in the municipality of Ensenada, Baja California, Mexico. Since 1930, local residents make a greatly appreciated handmade cheese in the region; however, the raw milk and cheese have never been analyzed for the microbiological quality and hygiene of the final product. The objective of this study was to evaluate the microbiological, physical and chemical quality of the raw milk used to produce cheese, and the artisanal cheese produced in the 22 individual production units. Samples of cheese and milk were collected from dairy production units in order to perform microbiological tests. There were physical and chemical determinations of protein, fat and lactose, using a LACTOSCAN-S analyzer. The results of milk analysis showed protein (33.11 g/L) and fat (39.89 g/L) contents within the parameters of the regulations. For the microbiological quality of milk, the results of the aerobic mesophilic count showed a 64 % compliance with the regulations; however, the same aerobic mesophilic count in the cheese samples resulted in only 4 % compliance. No Salmonella spp. or Listeria monocytogenes were detected in any of the tested milk or cheese samples. Good sanitation and manufacturing practices should be incorporated in order to enhance the sanitary quality and hygiene standards for the production of artisanal cheese in the community of Ojos Negros.]]></p></abstract>
