El objetivo fue evaluar la calidad nutritiva de plantas de las especies Amaranthus hypochondriacus L., A. cruentus L. y A. hybridus L. cultivadas en los municipios de Zapotitlán de Méndez y Tochimilco, del estado de Puebla y el municipio de Temoac, Morelos, México. Se evaluaron 43 genotipos clasificados por especie y uso en 11 accesiones de A. hypochondriacus para grano, 12 de A. hypochondriacus para verdura, 8 de A. cruentus para grano y 12 de A. hybridus para verdura. El ensayo se estableció en 2019 en Zapotitlán de Méndez, Puebla, México. El corte de las plantas se realizó a los 40 días después de la siembra, posteriormente se secaron, molieron y almacenaron para realizar un análisis proximal a las muestras. Se encontró que no hubo diferencias (p&#8804; 0.05) entre las accesiones con uso como grano y como verdura en la mayoría de las variables medidas, excepto en fibra detergente neutro y peso seco de tallo. Entre especies solo hubo diferencias (p&#8804; 0.05) en fibra detergente ácido, fibra detergente neutro y cenizas. Entre accesiones hubo diferencias (p&#8804; 0.05) en todas las variables, excepto en peso seco de hoja, peso seco de tallo y peso seco total. Las accesiones sobresalientes para ser aprovechadas como verdura por su alto contenido de proteína cruda y bajo contenido de fibra detergente ácido y de fibra dietaria fueron AV17, AV28, AV29, AV31 y Benito.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract There are few studies on the nutritional quality of young plants of the different species of the genus Amaranthus. The objective was to evaluate the nutritional quality of plants of the species Amaranthus hypochondriacus L., A. cruentus L., and A. hybridus L. grown in the municipalities of Zapotitlán de Méndez and Tochimilco, in the state of Puebla and the municipality of Temoac, Morelos, Mexico. The evaluation included forty-three genotypes classified by species and use in 11 accessions of A. hypochondriacus for grain, 12 of A. hypochondriacus for vegetables, 8 of A. cruentus for grain, and 12 of A. hybridus for vegetables. The trial was established in 2019 in Zapotitlán de Méndez, Puebla, Mexico. The plants were cut 40 days after sowing, then dried, ground and stored to perform a proximate analysis to the samples.
