<self-uri xlink:href="http://www.scielo.org.mx/scielo.php?script=sci_arttext&amp;pid=S2007-09342019000300683&amp;lng=en&amp;nrm=iso"></self-uri><self-uri xlink:href="http://www.scielo.org.mx/scielo.php?script=sci_abstract&amp;pid=S2007-09342019000300683&amp;lng=en&amp;nrm=iso"></self-uri><self-uri xlink:href="http://www.scielo.org.mx/scielo.php?script=sci_pdf&amp;pid=S2007-09342019000300683&amp;lng=en&amp;nrm=iso"></self-uri><abstract abstract-type="short" xml:lang="es"><p><![CDATA[Resumen Históricamente en el oriente del estado de Morelos se han producido y consumido los maíces nativos pigmentados (MNP), por lo que se planteó evaluar el efecto del ciclo de cultivo en las características fisicoquímicas y la calidad de la proteína de 26 poblaciones de MNP de los municipios de Temoac y Ayala de la región oriente de Morelos. Los MNP se colectaron en los ciclos primavera-verano 2014 y 2015, se calificó: peso hectolítrico (PH), peso de cien granos (PCG), índice de flotación (IF), pedicelo (PED), pericarpio (PER), germen (GER), endospermo harinoso (EHA) y corneo (ECO), así como aceite (ACE), proteína (PRO), triptófano (TRI), índice de calidad de proteína (IQP) y antocianinas (ANT). Los resultados se analizaron con un diseño combinado completamente al azar. En el oriente de Morelos predominaron las razas Elotes Occidentales &#8216;EO&#8217; y Pepitilla &#8216;Pep&#8217; de grano azul. En las variables se encontraron diferencias significativas (p&lt; 0.01) en el ciclo de cultivo, la población y la interacción. En el ciclo 2014 los maíces fueron de mayor: PCG, ECO, ACE, TRI e IQP y menor: IF, PRO y ANT. En general los MNP fueron de baja densidad (      X -PH= 63.7 kg hL-1;       X -IF= 84), grano grande (      X -PCG= 44.8 g), con alto: GER (      X -=13.1%), ACE (      X -= 5.14%), TRI (      X -= 0.076%), IQP (      X -= 0.81) y ANT (      X -= 276.6 mg ECG kg-1 MS). Destacaron las poblaciones &#8216;EO22&#8217; y &#8216;Pep20&#8217; por su elevado IQP, alto TRI y ANT, el resto de las poblaciones no mostro relación entre características químicas y nutricionales. Se identificaron 16 poblaciones con buena calidad de proteína (IQP &gt; 0.8) y elevado contenido de TRI (&gt;0.075%), que pueden ser usada para mejorar la nutrición y salud de los consumidores.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract Historically in east Morelos state, pigmented native maize (MNP) has been produced and consumed, so it was proposed to evaluate the effect of the crop cycle on the physicochemical characteristics and protein quality of 26 MNP populations of the municipalities of Temoac and Ayala of the eastern region of Morelos. The MNP were collected in the spring-summer 2014 and 2015 cycles, which were classified as: hectoliter weight (PH), weight of one hundred grains (PCG), flotation index (IF), pedicel (PED), pericarp (PER), germ (GER), floury endosperm (EHA) and corneal (ECO), as well as oil (ACE), protein (PRO), tryptophan (TRI), protein quality index (IQP) and anthocyanins (ANT). The results were analyzed with a completely randomized combined design. In the eastern of Morelos, the Western Elotes &#8216;EO&#8217; and Pepitilla &#8216;Pep&#8217; of blue grain predominated. In all the variables significant differences were found (p&lt; 0.01) in the culture cycle, the population and the interaction. In the 2014 cycle, the maizes were higher: PCG, ECO, ACE, TRI and IQP and lower: IF, PRO and ANT. In general, the MNP were of low density (      X -PH= 63.7 kg hL-1;       X -IF = 84), large grain (      X -PCG= 44.8 g), with high: GER (      X -= 13.1%), ACE (      X -= 5.14%), TRI (      X -= 0.076%), IQP (      X -= 0.81) and ANT (      X -= 276.6 mg ECG kg-1 MS).
