Metodología: con base en la teoría de los regímenes alimentarios y en el enfoque de sistemas agroalimentarios localizados, se diseñó una estrategia teórico-metodológica para identificar las dinámicas territoriales en torno a esta actividad. La información se completa con las percepciones de los productores, los consumidores y los informantes clave. Resultados: la escasez de materia prima producida localmente y la falta de cohesión social entre las unidades de producción artesanal de alimentos son los desafíos principales. Empero, el apego de dicha industria a la tradición, y la valoración que de ella se hace, inducen a los consumidores a sostener esta actividad en la región. Limitaciones del estudio: la carencia de un censo de unidades de producción artesanal de alimentos no permitió obtener una muestra estadísticamente representativa; sin embargo, ésta sí lo es de su heterogeneidad. Conclusiones: para catapultar este tipo de producción se requiere la atención multisectorial, centrada en la rehabilitación agroecológica de la producción primaria, la acción colectiva de los productores y la creación de una ruta gastronómica.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract Objective: to analyze the opportunities and challenges of artisanal food production in Magdalena de Kino, Sonora, where food hyper industrialization converges with a multiplicity of social movements focused on building healthier, greener and fairer food alternatives. Methodology: it is based on the theory of food regimes and on the approach of localized agri-food systems; a theoretical-methodological strategy was designed to identify the territorial dynamics around this activity. The perception of producers, consumers and key informants completes the information. Results: the shortage of locally produced raw materials and the lack of social cohesion between production units are the main challenges. However, the attachment to tradition in conjunction with consumer valuation has sustained this industry in the region. Study limitations: the lack of an artisanal food production unit census did not allow obtaining a statistically representative sample; however, the sample does represent its heterogeneity. Conclusions: catapulting artisanal food production requires multisector attention, focused on agro-ecological rehabilitation of primary production; producers&#8217; collective action and the creation of a gastronomic route will strengthen this activity.]]></p></abstract>
