La obtención del quitosano se produjo por la desproteinización, la desmineralización y la desacetilación química de los exoesqueletos en polvo. La calidad del material obtenido fue evaluada utilizando las técnicas de caracterización de espectroscopia en el infrarrojo, valoración potenciométrica y el método Kjeldahl. Adicionalmente, se midieron los parámetros de porcentaje de ceniza, humedad y materia insoluble, para cuantificar el grado de purificación del quitosano. Los resultados demuestran que el quitosano obtenido es de calidad comparable al quitosano comercial.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[This work presents the study realized in order to obtain chitosan from shrimp shells thrown out at seafood restaurants. The chemical method was used which basically consists of three steps: the deprotenisation, the demineralisation and the deacetylation, of the shells done dust. The characterization of the obtained material was realized by infrared spectroscopy, potentiometer valuation and the Kjeldahl method. In addition, the ash, humidity and insolvable matter percentage was obtained. Results show that the obtained chitosan is of similar quality than that found in the market.]]></p></abstract>

<body><![CDATA[<p align="justify"><font face="verdana" size="2"><b>Resumen</b></font></p>  	    <p align="justify"><font face="verdana" size="2">En este trabajo se presentan los resultados de la obtenci&oacute;n del quitosano a partir de exoesqueletos de camar&oacute;n desechados en restaurantes de comida marina. La obtenci&oacute;n del quitosano se produjo por la desproteinizaci&oacute;n, la desmineralizaci&oacute;n y la desacetilaci&oacute;n qu&iacute;mica de los exoesqueletos en polvo. La calidad del material obtenido fue evaluada utilizando las t&eacute;cnicas de caracterizaci&oacute;n de espectroscopia en el infrarrojo, valoraci&oacute;n potenciom&eacute;trica y el m&eacute;todo Kjeldahl. Adicionalmente, se midieron los par&aacute;metros de porcentaje de ceniza, humedad y materia insoluble, para cuantificar el grado de purificaci&oacute;n del quitosano.
