Se analizaron 28 muestras de leche cruda para la detección de Staphylococcus aureus, Escherichia coli, Listeria monocytogenes y Salmonella spp. utilizando métodos de cultivo. Además, muestras de leche pasteurizada se inocularon con L. monocytogenes y se sometieron a tratamientos de control microbiano: refrigeración (5 ± 1 °C durante 21 días), ebullición (1 min) y microondas (950 W durante 45, 55, 65 s). El contenido de proteína se evaluó mediante el método de Kjeldahl. Staphylococcus aureus se detectó en el 93 % de las muestras de leche cruda (5.0 a 9.0 x1010 UFC/mL). Se descartó la presencia de las otras bacterias en las muestras analizadas. Los tratamientos afectaron la presencia de L. monocytogenes y el contenido de proteína (P &lt; 0.05). El microondas eliminó a L. monocytogenes y preservó el contenido de proteína de la leche. Igualmente, el calentamiento redujo al patógeno, pero afectó negativamente el contenido proteico. Mientras que, la refrigeración limita el crecimiento microbiano. El microondas es una alternativa rápida y eficaz para garantizar la calidad de la leche.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract This case of study aimed to assess the microbiological quality of raw milk and evaluate household technics for microbiological control without compromising the protein content. Twenty-eight raw milk samples were analyzed for the presence of Staphylococcus aureus, Escherichia coli, Listeria monocytogenes and Salmonella spp. using traditional culturing methods. Additionally, samples of pasteurized milk were inoculated with L. monocytogenes and subjected to various microbial control treatments: refrigeration (5 ± 1 °C for 21 d), boiling (for 1 min) and microwaving (950 W for 45, 55, 65 s). Protein quality was evaluated using the Kjeldahl method. Staphylococcus aureus was detected in 93 % of the raw milk samples (ranging from 5.0 to 9.0 x 1010 CFU/mL). The presence of the other bacteria was ruled out in the analyzed samples. The treatments affected the presence of L. monocytogenes and protein content (P &lt; 0.05). Microwaving effectively eliminated L. monocytogenes while preserving milk protein content. Likewise, heating reduced pathogen but negatively impacted protein quality, whereas refrigeration limits microbial growth. Microwaving is a quick and effective alternative to ensure the quality milk.]]></p></abstract>
