Fruit have deciduous thorns and shelf life is less than six days at ambient temperature, which limits commercialization. The objective of this study was to evaluate the postharvest behavior of pitaya fruit under refrigeration conditions and also to evaluate the effect of thorn removal on fruit quality attributes. Storage for 21 d at 12 °C was conducted with pitaya fruit of red and orange flesh, handled with or without thorns. Fruit weighed between 168.1 and 197.6 g, with respiration rate between 11.9 and 12.6 mL&#8901;kg-1&#8901;h-1, and with soft consistency, expressed through firmness in flesh less than 2 N. Color attributes, total soluble solids (TSS), betalains and total soluble phenols (TSP) contents, and antioxidant activity were different between variants. Hue angle, chroma, and lightness in flesh were 22.0-25.0°, 29.0-31.0, and 22.8-23.8, respectively, in red fruit, and 35.5-37.7°, 38.9-41.5, and 29.7-32.6, in orange fruit. The TSS/acidity ratio was higher in orange (152.8-157.0) than in red (115.5-132.0) fruit. Betalains and TSP had average values of 4.7-423.0 and 2.5-221.6 mg&#8901;kg-1 in red and orange material, respectively, which caused higher antioxidant activity in the former. Betalains content remained constant over time, but TSP diminished and this caused a reduction in antioxidant activity. Thorn removal only affected weight loss and it was considered an advisable practice. Based on firmness modification and loss of antioxidant activity, shelf life was estimated to be 12-14 d.]]></p></abstract>
<abstract abstract-type="short" xml:lang="es"><p><![CDATA[Resumen La pitaya (Stenocereus pruinosus) es una cactácea de hábito columnar que puede ser encontrada en regiones semiáridas. El fruto tiene espinas deciduas y su vida de anaquel es menor de seis días a temperatura ambiente, lo que limita su comercialización. El objetivo de este estudio fue evaluar el comportamiento postcosecha del fruto de pitaya bajo condiciones de refrigeración y el efecto sobre los atributos de calidad del fruto al remover las espinas. Se almacenaron frutos de pitaya de pulpa roja y naranja, con o sin espinas, durante 21 días a 12 °C. Los frutos pesaron entre 168.1 y 197.6 g, presentaron tasa de respiración entre 11.9 y 12.6 mL&#8729;kg-1&#8729;h-1 y consistencia suave, expresada a través de firmeza en pulpa menor a 2 N. Los atributos de color, contenido de sólidos solubles totales (SST), betalaínas, fenoles solubles totales (FST) y actividad antioxidante fueron diferentes entre variantes. El ángulo de tono, la cromaticidad y la luminosidad en frutos rojos fueron de 22.0 a 25.0°, 29.0 a 31.0 y 22.8 a 23.8, respectivamente, y en frutos naranja de 35.5 a 37.7°, 38.9 a 41.5 y 29.7 a 32.6. La relación SST/acidez fue más alta en frutos naranja (entre 152.8 y 157.0) que en los rojos (entre 115.5 y 132.0). Los valores promedio de las betalaínas y los FST presentados en los materiales rojo y naranja fueron de 4.7 a 423.0 y de 2.5 a 221.6 mg&#8729;kg-1, respectivamente, lo que causó actividad antioxidante mayor en los primeros. El contenido de betalaínas permaneció constante a lo largo del tiempo, pero los FST disminuyeron causando reducción en la actividad antioxidante. La remoción de espinas sólo afectó la pérdida de peso y fue considerada una práctica recomendable. Con base en la modificación de firmeza y la pérdida de actividad antioxidante, se estimó que la vida de anaquel fue de 12 a 14 días.]]></p></abstract>
