<self-uri xlink:href="http://www.scielo.org.mx/scielo.php?script=sci_arttext&amp;pid=S0187-73802020000400443&amp;lng=en&amp;nrm=iso"></self-uri><self-uri xlink:href="http://www.scielo.org.mx/scielo.php?script=sci_abstract&amp;pid=S0187-73802020000400443&amp;lng=en&amp;nrm=iso"></self-uri><self-uri xlink:href="http://www.scielo.org.mx/scielo.php?script=sci_pdf&amp;pid=S0187-73802020000400443&amp;lng=en&amp;nrm=iso"></self-uri><abstract abstract-type="short" xml:lang="es"><p><![CDATA[Resumen El fruto de guanábana (Annona muricata L.) es climatérico y altamente perecedero, presenta alta tasa de respiración que ocasiona un acelerado ablandamiento de los frutos, lo que se manifiesta en una corta vida de anaquel y provoca varios problemas en su manejo postcosecha y, en consecuencia, su almacenamiento y comercialización se ven limitados. Los recubrimientos comestibles son una alternativa que puede ayudar a incrementar la vida de anaquel, además de conservar las características fisicoquímicas, fisiológicas y nutracéuticas (compuestos bioactivos) asociadas con la calidad de los frutos. El objetivo de este estudio fue evaluar los cambios en la actividad antioxidante por los métodos DPPH, ABTS y FRAP, así como el contenido de fenoles, flavonoides y vitamina C durante la maduración de frutos de guanábana sin y con recubrimiento a base de almidón, almacenados a 22 y 15 ± 2 °C, con humedad relativa de 90 %. Los frutos con recubrimiento almacenados a 15 ± 2 ºC presentaron la mayor actividad antioxidante (mg EAA/100 g.p.f.), 285 (DPPH) y 15.92 (FRAP), respectivamente, mientras que en los frutos sin recubrimiento a la misma temperatura de almacenamiento la actividad antioxidante fue menor, con 46.5 y 52.4 (ABTS); asimismo, bajo estas condiciones la concentración de compuestos fenólicos fue de 90.6 y 93.98 mg EAG/100 g.p.f. Con respecto a la concentración de vitamina C y flavonoides, éstos fueron mayores en los frutos con recubrimiento almacenados a 15 ± 2 °C con 31.79 mg EAA/100 g.p.f. y 95.93 mg EQ/100 g.p.f., respectivamente.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Summary Soursop fruit (Annona muricata L.) is climacteric and highly perishable, it has a high respiration rate that causes an accelerated softening of the fruits, which is manifested in a short shelf life and causes several problems in its postharvest handling and, consequently, their storage and commercialization are limited. Edible coatings are an alternative that can help to increase shelf life, in addition to preserving the physicochemical, physiological and nutraceutical characteristics (bioactive compounds) associated with the quality of the fruits. The objective of this study was to evaluate the changes in antioxidant activity by the DPPH, ABTS and FRAP methods, as well as the content of phenols, flavonoids and vitamin C during the maturation of soursop fruits without and with starch-based coating, stored at 22 and 15 ± 2 °C with relative humidity of 90 %. The coated fruits stored at 15 ± 2 ºC presented the highest antioxidant activity (mg EAA/100 g.f.w.), 285 (DPPH) and 15.92 (FRAP), respectively; while in the uncoated fruits at the same storage temperature, their antioxidant activity was lower, 46.5 and 52.4 (ABTS); likewise, under these conditions the concentration of phenolic compounds was 90.6 and 93.98 mg EAG/100 g.f.w.
