La mazorca (olote y grano) está constituida en un 85% por grano y un 15% de olote. Su alto contenido en antocianina, principalmente como cianidina-3-glucosido (C3G), hace que actúe como un poderoso antioxidante natural, anticancerígeno, y antiinflamatorio, además, ayuda a disminuir la presión sanguínea y el colesterol alto, mejora la circulación sanguínea y promueve la regeneración del tejido y es por estos importantes beneficios, que surge la necesidad de comprender el mecanismo de acción de las antocianinas en la salud humana. Por ello, el objetivo del presente trabajo de revisión es describir la estructura química de las antocianinas, tipos y factores que afectan no solo el color sino también su estabilidad. En la segunda parte, se detallaron las diferentes razas y variedades mejoradas del maíz morado con que cuenta el Perú, y la cantidad de antocianinas encontradas con las diferentes técnicas químicas utilizadas. Por último, se describieron las diferentes actividades biológicas de las antocianinas poniendo énfasis en la más importante como un poderoso antioxidante. Encontrando que las condiciones de extracción óptima de las antocianinas son con 1 g de muestra con 15 mL de agua con agitación constante durante 15 min a 90 ºC, resaltando el poder antioxidante alto tanto en sistemas in-vitro como ex&#8209;vivo.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Summary: The purple corn (Zea mays L.), is an important cereal in Peru, which contains polyphenols, among which include flavonoids, being anthocyanins the most important one. The ear (cob and grain) is made up of 85% grain and 15% cob. Its high content of anthocyanin, mainly as cyanidine-3-glucoside (C3G), makes it act as a powerful natural antioxidant, anti-carcinogenic, and anti-inflammatory, it also helps lower blood pressure and high cholesterol, improves blood circulation and promotes tissue regeneration. Because of these important benefits, it arises the need to understand the mechanism of action of anthocyanins in human health. Therefore, the objective of the present review paper is to describe the chemical structure of anthocyanins, what types and factors affect not only its color but also its stability. In the second part, it was detailed the different races and varieties improved of purple corn in Peru, and the amount of anthocyanins found with the different chemical techniques used. Finally, the different biological activities of anthocyanins are described with emphasis in the most important one as a powerful antioxidant. Finding that the optimal extraction conditions of anthocyanins are with 1 g of sample and 15 mL of water with in agitation constant for 15 min at 90 ºC, highlighting the high antioxidant power in both systems in-vitro and ex-vivo.]]></p></abstract>
