Twenty seven fungal species were obtained, belonging to 18 genus. Of them, 100 % showed pathogenicity in the original product, and that behavior was verified throught Koch's postulates. However, both sellers and consumers did not realized of that pathogenicity. Literature research indicates that 60.9 % of the obtained species can be potentially producers of mycotoxins. For these reasons, it is necessary to highlight the urgency of establishing controls throught out the development of normativity which links phytosanitary diagnosis criteria with safety food in México.]]></p></abstract>

Se obtuvieron un total de 27 especies fúngicas, pertenecientes a 18 géneros, de las cuales se comprobó que el 100 % presentaron patogenicidad en el producto original, de acuerdo con los postulados de Koch; sin embargo, éstas pasaron desapercibidas tanto por vendedores como por consumidores. Finalmente, se corroboró con la literatura que el 60.9 % de dichas especies pueden ser potencialmente productoras de micotoxinas. Por lo anterior, cabe mencionar la urgencia de establecer controles a través de la creación de la normatividad correspondiente, que relacione criterios de diagnóstico fitosanitario con seguridad alimentaria en México.]]></p></abstract>

Por lo anterior, cabe mencionar la urgencia de establecer controles a trav&eacute;s de la creaci&oacute;n de la normatividad correspondiente, que relacione criterios de diagn&oacute;stico fitosanitario con seguridad alimentaria en M&eacute;xico. </font></p>     <p align="justify"><font face="verdana" size="2"><b>Palabras clave: </b>Metabolitos secundarios, micotoxinas.</font></p>     <p align="justify"><font face="verdana" size="2">&nbsp;</font></p>     <p align="justify"><font face="verdana" size="2">Las frutas y hortalizas son productos perecederos, susceptibles al ataque de microorganismos antes o despu&eacute;s de la cosecha y durante su almacenamiento; tal es el caso de los hongos fitopat&oacute;genos, los cuales, de acuerdo con Herrera&#150;Estrella y Carsolio (1998) pueden provocar grandes p&eacute;rdidas en la producci&oacute;n de frutas y hortalizas. Por otra parte, este tipo de microorganismos son capaces de producir sustancias, como resultado de su metabolismo secundario, como las micotoxinas, que se distribuyen con facilidad en el substrato y pueden llegar a ser perjudiciales, a&uacute;n cuando se encuentran en concentraciones muy bajas, poniendo en entredicho su inocuidad, ya que un 25 % de las cosechas de alimentos a nivel mundial est&aacute;n contaminadas con alg&uacute;n tipo de micotoxinas, lo cual representa un fuerte riesgo para la salud de la poblaci&oacute;n de pa&iacute;ses importadores de alimentos que no controlan estos contaminantes (FAO, 2001).</font></p>     <p align="justify"><font face="verdana" size="2">No obstante, en M&eacute;xico se carece de conocimientos previos que permitan la detecci&oacute;n oportuna de sustancias t&oacute;xicas producidas por hongos fitopat&oacute;genos que atacan a frutas y hortalizas, lo cual representa un posible riesgo para la salud del consumidor (Lagunes y Trigos, 2006). A pesar de haber aumentado el n&uacute;mero de investigaciones relacionadas con la producci&oacute;n de metabolitos secundarios a partir de hongos fitopat&oacute;genos (Trigos, 1999; M&aacute;rquez y Trigos 2005), actualmente falta informaci&oacute;n adecuada y la normatividad es limitada, en contraste con pa&iacute;ses que controlan de manera integral la calidad, fitosanidad y seguridad alimentaria (Espinoza y Ram&iacute;rez, 2007), por lo que se considera importante generar informaci&oacute;n relacionada con su capacidad de producir metabolitos secundarios.</font></p>     <p align="justify"><font face="verdana" size="2">Por lo anterior, en el presente estudio se realiz&oacute; un monitoreo mensual dirigido durante un a&ntilde;o en frutas y hortalizas expendidas en Xalapa, Veracruz, M&eacute;xico, con el objetivo de determinar la presencia de hongos fitopat&oacute;genos, as&iacute; como la patogenicidad de &eacute;stos y correlacionar su potencial sint&eacute;tico de metabolitos secundarios t&oacute;xicos.</font></p>     <p align="justify"><font face="verdana" size="2">Se analizaron mensualmente y durante un a&ntilde;o 28 muestras de las frutas y hortalizas, que de acuerdo con el Servicio de Informaci&oacute;n y Estad&iacute;stica Agroalimentaria y Pesquera, SIAP (<a href="http://www.siap.sagarpa.gob.mx/" target="_blank">http://www.siap.sagarpa.gob.mx</a>), son las que m&aacute;s se producen en M&eacute;xico y con posibilidad de consumo, pero con s&iacute;ntomas iniciales (Romero, 1988; Agrios, 1998; Lagunes y Trigos, 2006), las cuales se obtuvieron en tres establecimientos comerciales representativos de dicha ciudad, considerando los siguientes productos por su importancia, en cuanto a frecuencia de consumo y f&aacute;cil adquisici&oacute;n: Aguacate <i>(Persea americana), </i>Manzana <i>(Malus pumila </i>Mill.), Calabacita <i>(Cucurbita pepo </i>L.), Mel&oacute;n <i>(Cucumis melo </i>L.), Camote <i>(Ipomoea batatis </i>L.), Naranja <i>(Citrus sinensis </i>L.), Carambolo <i>(Averrhoa carambola </i>L.), Papa <i>(Solanum tuberosum </i>L.), Cebolla <i>(Allium cepa </i>L.), Papaya <i>(Caricapapaya </i>L.) Coliflor <i>(Brassica olereacea </i>L.), Pepino <i>(Cucumis sativus </i>L.), Durazno <i>(Prunus persica </i>L.), Pera <i>(Pyrus communis </i>L.) Ejote <i>(Phaseolus vulgaris </i>L.), Pimiento <i>(Capsicum annuum </i>L. var. <i>annuum), </i>Guayaba <i>(Psidium guajava </i>L.), Pl&aacute;tano <i>(Musa </i>sp.), Haba <i>(Vicia faba </i>L.), Puerro <i>(Allium porrum </i>L.), Jitomate <i>(Lycopersicun sculentum </i>Mill), R&aacute;bano <i>(Rhaphanus sativus </i>L.), Lim&oacute;n <i>(Citrus limon </i>L.) Tomate <i>(Physalis philadelphica </i>Lam), Mandarina <i>(Citrus retucilata </i>L.), Uva <i>(Vitis vinifera </i>L.), Mango <i>(Mangifera indica </i>L.), Zanahoria <i>(Daucus carota </i>L.).</font></p>     <p align="justify"><font face="verdana" size="2">El aislamiento de los hongos fitopat&oacute;genos presentes en las frutas y hortalizas, se realiz&oacute; mediante la t&eacute;cnica de c&aacute;mara h&uacute;meda de acuerdo con Gilchrist&#150;Saavedra (1995); posteriormente, se inocularon en medio de cultivo ADP (agar con dextrosa y papa) con 0.2 g/L de cloranfenicol e incubaron a 27 &deg;C (Agrios, 1998). Los aislamientos fueron identificados de acuerdo con su g&eacute;nero y especie, utilizando las claves de Moreno (1988), Romero (1988), Mendoza (1993, 1996), Whitside <i>et al. </i>(1996) y Barnett y Hunter (1998).</font></p>     ]]></body>
<body><![CDATA[<p align="justify"><font face="verdana" size="2">Para determinar la patogenicidad de los hongos encontrados se utilizaron los postulados de Koch (Agrios, 1998), de manera que todos los hongos obtenidos fueron inoculados en los frutos de donde se aislaron originalmente, con la finalidad de observar la capacidad de la cepa para producir la misma enfermedad.</font></p>     <p align="justify"><font face="verdana" size="2">Debido a que se realiz&oacute; un monitoreo dirigido, en todas las muestras analizadas se encontr&oacute; presencia de hongos fitopat&oacute;genos; adem&aacute;s, todos los hongos aislados provocaron da&ntilde;o (actividad patog&eacute;nica) en cada una de las especies de frutas y hortalizas inoculadas, lo cual indica que &eacute;stos son agentes causales de la degradaci&oacute;n del material en estudio, con capacidad de reproducirse y causar infecci&oacute;n.</font></p>     <p align="justify"><font face="verdana" size="2">De las 336 muestras, se obtuvieron 344 aislamientos, distribuidos de la siguiente manera: 83 de <i>Alternaria, </i>47 de <i>Fusarium, </i>26 de <i>Curvularia, </i>25 de <i>Rhizopus, </i>24 de <i>Penicillium, </i>20 de <i>Colletotrichum, </i>17 de <i>Phytium, </i>14 de <i>Mucor, </i>13 de <i>Nigrospora </i>y <i>Phoma, </i>11 de <i>Pestalotia, </i>10 de <i>Mucor</i>, 13 de <i>Nigrospora</i> y <i>Phoma</i>, 11 de <i>Pestalotia</i> , 10 de <i>Lasiodiplodia </i>y <i>Macrophomina, </i>8 de <i>Ceratocystis </i>y <i>Circinella, </i>6 de <i>Botrytis, </i>5 de <i>Gliocadium </i>y 4 de <i>Geotrichum. </i>De los g&eacute;neros aislados, se encontraron 27 especies, las cuales se presentan en la <a href="/img/revistas/rmm/v28nspe/a15t1.jpg" target="_blank">Tabla 1</a>.</font></p>     <p align="justify"><font face="verdana" size="2">Se observ&oacute; que <i>Alternaria </i>present&oacute; 24.7 % de incidencia, <i>Fusarium; Curvularia, Rhizopus, Penicillilum,</i><i> </i><i>Colletorrichum, Pythium y Mucor 7.7, 7.4, </i>7.1, 6.0, 5.1 y 4.2% respectivamente;  finalmente, los g&eacute;neros <i>Nigrospora, </i><i>Phoma,   Pestalotia,   Lasiodiplodia,   Macrophomina, </i><i>Ceratocystis, Circinella, Botrytis, Gliocadium </i>y <i>Geotrichum </i>s&oacute;lo presentaron 3.9,3.9,3.3,3.0,3.0,2.4,2.4,1.8,1.5,1.2 %, respectivamente.</font></p>     <p align="justify"><font face="verdana" size="2">Los g&eacute;neros <i>Alternaria, Botrytis, Lasiodiplodia, Penicillium, Colletotrichum, Phoma, Fusarium, Rhizopus </i>y <i>Mucor, </i>son conocidos como los principales causantes de las alteraciones m&aacute;s frecuentes en frutas y hortalizas, especialmente las referidas al aspecto f&iacute;sico, valor nutricional, caracter&iacute;sticas organol&eacute;pticas y dificultad de conservaci&oacute;n, as&iacute; como de las alergias e intoxicaciones en los consumidores, debido a que producen estructuras especializadas que se depositan sobre el producto, penetran, invaden y eventualmente colonizan masivamente el tejido para causar da&ntilde;o y posteriormente segregar sustancias, como consecuencia de su metabolismo secundario (Fitenborg <i>et al., </i>1996).</font></p>     <p align="justify"><font face="verdana" size="2">De las 27 especies de hongos fitopat&oacute;genos aisladas, 24 (88.8 %) se han reportado como capaces de producir metabolitos bioactivos como antibi&oacute;ticos, antif&uacute;ngicos, antivirales, bactericidas, citotoxinas, fitoalexinas, fitotoxinas, fungicidas, herbicidas, insecticidas y, sobre todo, micotoxinas (<a href="/img/revistas/rmm/v28nspe/a15t1.jpg" target="_blank">Tabla 1</a>); de &eacute;stas, 14 son capaces de sintetizar diferentes micotoxinas, perjudiciales para la salud del hombre y animales, es decir, m&aacute;s de la mitad (51.9 %) de las especies encontradas podr&iacute;an en un momento dado llegar a producir micotoxinas; estos datos indican que la presencia de dichos hongos, tanto en n&uacute;mero de aislamientos como en las muestras que contaminan, pueden representar un posible riesgo, cuando infestan frutas y hortalizas.</font></p>     <p align="justify"><font face="verdana" size="2">Si bien el determinar la presencia de hongos fitopat&oacute;genos en frutas y hortalizas es una t&eacute;cnica relativamente sencilla, debido a la gran biodiversidad con que cuenta M&eacute;xico, es pr&aacute;cticamente imposible contar con suficiente informaci&oacute;n sobre el metabolismo secundario y las sustancias t&oacute;xicas o ben&eacute;ficas que pueden llegar a producir los hongos que atacan estos alimentos frescos, por lo que es necesario, que nuestro pa&iacute;s cuente con m&aacute;s equipos de trabajo capaces de estudiar estas sustancias y de marcar l&iacute;mites permisibles, tanto de micotoxinas como de otras sustancias en los diferentes grupos de alimentos y, con ello, establecer la normatividad correspondiente, de manera que se lleven a la pr&aacute;ctica mejores controles en materia de seguridad alimentaria, tal como se hace en pa&iacute;ses de Europa y Estados Unidos. Lo anterior, ayudar&iacute;a a relacionar los criterios de fitosanidad y seguridad alimentaria y, con esto, disminuir&iacute;an los riesgos para la salud por ingesta indirecta de sustancias nocivas.</font></p>     <p align="justify"><font face="verdana" size="2">Por &uacute;ltimo, cabe se&ntilde;alar que por primera vez, en M&eacute;xico, se reporta el aislamiento de frutas y hortalizas postcosecha de las especies <i>Pythium debaryanum </i>en camote y r&aacute;bano y <i>Circinella minor </i>en ejote.</font></p>     <p align="justify"><font face="verdana" size="2">&nbsp;</font></p>     <p align="justify"><font face="verdana" size="2"><b>Literatura citada</b></font></p>     ]]></body>
