Nela o turismo rural se apresenta como uma atividade não agrícola importante para o sustento da família proprietária, e para sua permanência no campo. O debate centra-se na interação entre visitantes e familiares, e nas mudanças nos modos de vida dos receptores, em especial nas suas práticas alimentares cotidianas. O objetivo é o de analisar a construção do cardápio, considerando-o como expressão identitária e patrimonial, atentando para possíveis mudanças motivadas pela presença de turistas. O método utilizado para coleta de dados foi a etnografia, com registro dos dados em diário de campo e entrevista semiestruturada. Como resultado tem-se que o cardápio é híbrido e plural, emergindo na análise as categorias &lt;comida nossa&gt; e &lt;comida turística&gt;, separação que parece pretender qualificar a interação com o turista, mas também preservar a identidade familiar, neste caso a comida tida como patrimônio.]]></p></abstract>
<abstract abstract-type="short" xml:lang="es"><p><![CDATA[Resumen: El estudio se llevó a cabo en una propiedad rural pluriactiva y multifuncional en el sur de Brasil. En la misma, el turismo rural es una actividad no agrícola importante en cuanto apoyo económico para la familia de propietarios a propósito para su permanencia en la estancia. El debate tiene su centro en la interacción entre visitantes y familiares, y en los cambios en el estilo de vida de los anfitriones, especialmente en sus hábitos alimentarios cotidianos. El objetivo es analizar la elaboración del menú, al que se considera como identidad y expresión del patrimonio, señalando un posible cambio motivado por la presencia de los turistas. El método utilizado para la recolección de datos fue la etnografía, con registro en diario de campo, y entrevistas semiestructuradas. Como resultado tenemos que el menú es híbrido y plural, y que, emerge del análisis la separación entre &#8220;alimento nuestro&#8221; y &#8220;alimento de turista&#8221;, categorías que buscan, tanto calificar la interacción con los turistas como preservar la identidad de la familia, una vez que la comida se siente patrimonio personal.]]></p></abstract>
