Metodología:  Se llevó a cabo una encuesta en línea a estudiantes universitarios del centro del país. Se analizó la fiabilidad y validez de la escala con la prueba de Alfa de Cronbach, la estructura de la ENA se exploró a través del Método de Componentes Principales.  Resultados:  El valor de neofobia alimentaria de acuerdo a la ENA entre la población de estudio fue de 26.00±6.49, lo que sugiere niveles de neofobia alimentaria bajos. Se identificaron dos grupos que presentaron diferencias en la ENA: neofílicos (20.93±4.05) y neofóbicos (31.28±3.78), aunado a que las mujeres fueron más neofóbicas a diferencia de los hombres.  Limitaciones:  La neofobia alimentaria debe corroborarse entre más sectores de la población, dado que los resultados de esta investigación solo representan a un sector en específico, quienes son jóvenes y se encuentran inmersos en un contexto educativo.  Conclusiones:  Los resultados establecen estabilidad en la neofobia alimentaria de acuerdo a estudios previos; sin embargo, el mayor cambio es que las mujeres fueron más reluctantes en la incorporación de nuevos alimentos a su dieta. Esto puede deberse a que el estudio fue llevado a cabo en tiempos de la pandemia por COVID-19, lo que sugiere que esta emergencia sanitaria ha enfatizado la preocupación por este sector de la población con respecto a su conducta alimentaria.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract  Objective: To study food neophobia among Mexican university students in times of the COVID-19 pandemic using the Food Neophobia Scale (FNS).  Methodology:  An online survey was conducted with university students from the center of the country. The reliability and validity of the scale was analyzed with the Cronbach's Alpha test, the structure of the FNS was explored through the Principal Components Analysis.  Results:  The value of food neophobia according to the FNS among the study population was 26.00 ± 6.49, suggesting low levels of food neophobia. Two groups were identified that presented differences in the FNS: neophoilics (20.93 ± 4.05) and neophobics (31.28 ± 3.78), in addition, women were more neophobic than men were.  Limitations:  Food neophobia must be corroborated among more sectors of the population, since the results of this research only represent a specific sector, who are young and are immersed in an educational context.  Conclusions:  The results indicate stability in food neophobia according to previous studies; however, the major change is that women were more reluctant to incorporate new foods into their diet. This may be due the study was carried out at the time of the COVID-19 pandemic, which suggests that this health emergency has emphasized the concern of this sector of the population regarding their eating behavior.]]></p></abstract>
