El presente estudio describe características químicas del fruto de mangostán cultivado en Tuxtla Chico, Chiapas. Los frutos fueron madurados a 23° C, 70 % H.R., y se analizaron a los 0, 3, 6, 9 y 12 d después de su cosecha. Los frutos presentaron altas cantidades de azúcares (150 mg/g p.f. a 280 mg/g p.f.) el cual los árboles 26 y 219 presentaron el pico más alto el día 12. Los solubles totales alcanzaron valores máximos el día inicial (20.1 °Brix ) en el árbol 26, el árbol 94 registró la mayor media (19.5 °Brix). Los compuestos fenólicos se cuantificaron en 17. 76 µg/g y 49.21 µg/g en pulpa y cáscara, respectivamente; corroborando que la cascara, la cual se desecha, cuenta con moléculas potenciales para su explotación. La actividad antioxidante en pulpa incrementó durante la poscosecha en los métodos aplicados: 1,1-difenil, 2-picrylhidrazilo (DPPH), 2,2&#8217; -azinobis-(3-etilbenzotiazolin-6-sulfónico) (ABTS) y Capacidad de reducción férrica de plasma (FRAP), siendo FRAP el que mayor actividad de captura presentó (178 mg EAA/100 g), donde el árbol 284 registró la media más alta (111.08 mg/EAA 100 g), comprobando que los frutos de G. mangostana cultivados en Tuxtla Chico, Chiapas, muestran potencial antioxidante.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract Garcinia mangostana fruit contains biomolecules with great antioxidant capacity, generating interest in the pharmaceutical industry. The present study describes chemical characteristics of the mangosteen fruit cultivated in Tuxtla Chico, Chiapas. The fruits were ripened at 23° C, 70 % R.H., and were analyzed at 0, 3, 6, 9 and 12 days after harvest. The fruits presented high amounts of sugars (150 mg/g w.f. to 280 mg/g w.f.) of which trees 26 and 219 presented the highest peak on day 12. Total solubles reached maximum values on initial day (20.1 °Brix) in tree 26; tree 94 registered the highest average (19.5 °Brix). Phenolic compounds were quantified at 17.76 µg/g and 49.21 µg/g in pulp and peel, respectively; corroborating that the peel, which is discarded, has potential molecules for exploitation.
