El género Pleurotus tiene especies con eficiente degradación de desechos lignocelulósicos y representan una fuente importante de nutrientes para la alimentación humana al aportar proteínas, aminoácidos, vitaminas y minerales. El objetivo de este estudio fue comparar productivamente dos cepas de Pleurotus spp cultivadas en bagazo de agave y paja de maíz, así como analizar la concentración mineral de los cuerpos fructíferos. Para realizar el estudio se utilizó la cepa silvestre UG-01 (Pleurotus djamor) y la cepa comercial BR.1 (Pleurotus ostreatus); éstas fueron inoculadas en residuos de bagazo de agave y paja de maíz como control comercial, por ser el sustrato de referencia en la producción regional. Para el pretratamiento de los sustratos se utilizó el método de inmersión alcalina con hidróxido de calcio. Las variables de estudio fueron peso fresco, longitud y diámetro de los basidiomas y eficiencia biológica. Posteriormente, los elementos Na, K, Ca, Fe, Cu y Zn se analizaron por espectrofotometría de llama. El mayor peso fresco de los basidiomas se presentó en la cepa BR.1 cultivada en bagazo de agave, con 52.7 g, en comparación con los 49.1 g producidos en la paja de maíz. La cepa UG-01 produjo 27.1 y 25.2 g en bagazo de agave y paja de maíz, respectivamente. En los basidiomas de la cepa BR.1 cultivados en bagazo de agave y paja de maíz el mineral con mayor presencia fue el K, con 5.6 y 7.4 g kg-1, respectivamente, mientras que, en la cepa UG-01 en los mismos sustratos el contenido de K fue de 7.0 y 6.6 g kg-1, respectivamente. La cepa BR.1 fue la más productiva y la cepa UG-01 la que presentó mayor contenido de minerales, cuando ambas cepas fueron cultivadas en bagazo de agave.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Summary In Mexico, a large amount of agave waste is generated, in which the use of white rot fungi is an alternative for its utilization. The Pleurotus genus has species with efficient degradation of lignocellulosic wastes and represents an important source of nutrients for human food by providing proteins, aminoacids, vitamins and minerals. The aim of this study was to compare productively two strains of Pleurotus spp. grown on agave bagasse and corn straw, as well as to analyze the mineral concentration of the fruiting bodies. The wild strain UG-01 (Pleurotus djamor) and the commercial strain BR.1 (Pleurotus ostreatus) were used for the study; these were inoculated on agave bagasse and corn straw residues as a commercial control, since this is the reference substrate in regional production. For pretreatment of the substrates, the alkaline immersion method with calcium hydroxide was used. The study variables were fresh weight, length and diameter of basidiomes and biological efficiency. Subsequently, the elements Na, K, Ca, Fe, Cu and Zn were analyzed by flame spectrophotometry. The highest fresh weight of basidiomes was presented in strain BR.1 grown on agave bagasse, with 52.7 g, compared to 49.1 g produced on corn straw. Strain UG-01 produced 27.1 and 25.2 g in agave bagasse and corn straw, respectively.
