Cierto es que la patrimonialización pone de manifiesto la elaboración de reglas y normas promovidas por instituciones internacionales que tienen una ambición claramente universalista, pero en cuanto a sus usos y su puesta en marcha, ésta también refleja decisiones, expectativas, estrategias y dinámicas tanto de actores como de grupos locales con intereses variados y, a menudo, divergentes. El caso del patrimonio alimentario, y más precisamente el de las &#8220;rutas gastronómicas&#8221; en México, pone al día los imperativos contradictorios que están en juego en torno a la patrimonialización, así como las narrativas en las cuales se apoya. Más allá, el patrimonio alimentario cuestiona la relación de las sociedades con su historia.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract Heritage is becoming increasingly important in most contemporary societies, so what can explain its success? Although it is true that patrimonialization reveals the elaboration of rules and norms promoted by international institutions, showing a clearly universalistic ambition in terms of its uses and its implementation, it also reflects decisions, expectations, strategies and dynamics of both actors and local groups with varied and often divergent interests. The particular case of food heritage, and more precisely that of the &#8220;gastronomic routes&#8221; in Mexico, updates the contradictory challenges that are at stake regarding patrimonialization, as well as the narratives on which it is based. Beyond that, food heritage questions the relationship of societies with their history.]]></p></abstract>
<abstract abstract-type="short" xml:lang="fr"><p><![CDATA[Résumé À quoi renvoie le succès du patrimoine qui a cours dans la plupart des sociétés contemporaines? S&#8217;il manifeste la production de règles et de normes promues par des institutions internationales, et qu&#8217;il affiche une ambition clairement universaliste, le patrimoine, quant à ses usages et sa mise en &#339;uvre, n&#8217;en reflète pas moins l&#8217;expression de choix, d&#8217;attentes, de stratégies ou de dynamiques d&#8217;acteurs et de groupes locaux aux intérêts multiples et souvent divergents. Le cas du patrimoine alimentaire, plus particulièrement des « routes gastronomiques » au Mexique, met au jour les enjeux contradictoires qui se jouent autour de la patrimonialisation et les formes narratives sur lesquelles il s&#8217;appuie.
