In this text, the problem of the historical configuration of regional food pattern in the sociohistorical space of the city and state of Colima, in western Mexico is addressed. In addition, the different forms of society and the social subjects that in each of them actively participated in the historical conformation of the regional diet are highlighting in this process.

The pattern of food consumption in the prehispanic space -occupied today by the state of Colima- was based on the polyculture milpa, increased by a great biodiversity due to the connection of high and low lands. After the rupture that meant the Spanish conquest, a discriminatory carnivorous pattern was imposed on the enormous diversity of native and pre-Hispanic taste plants; factors such as the type of miscegenation, productive pattern and power relations (ideological and political) among the various ethnic groups of the long period of New Spain were influenced. Nevertheless, at the end of the twentieth century, a revaluation of vegetables begins in the pattern of consumption and an opening to kitchens in other places as well as fast food, whom, coupled with a sedentary lifestyle, precipitated the problems of obesity and related diseases.
