Objective:

To analyze the role and impact, that quality control processes have had in the improvement of the pork industry.

Methodology:

An exploratory research aimed at pork processing companies in the state of Sonora.

Results:

To document the importance of quality control certifications, which is more than a common business practice, it is a requirement in order to be competitive in international markets.

Limitations:

Since this an exploratory approach, it was only possible to confirm the importance of standards and regulations as a common element in pork industry performance. It was not possible to measure or quantify its impact on the competitiveness of the companies.

Conclusions:

Regarding the food industry, safety is a priority, and in that sense, companies that want to be at the forefront will comply with quality control standards, not only to produce quality product, but also to do so under the best criteria. In this sense, quality emerges as a new emblem of competitiveness, which has been possible to verify from the results of the exploration carried out in the pork companies of Sonora.
