Abstract

Objective:

The research analyzes the dietary adaptation strategies of peasant corn producers to access and have food in the face of climatic variability and decreased income in the central east of the state of Puebla.

Methodology:

The research with a simple aleatory sampling randomly and without substitution, which was applied at a sample size of 95 peasants.

Results:

The study shows that the use of social food programs and income derived from migration.

Limitations:

We were not implemented food safety surveys.

Conclusions:

The food adaptation strategies have caused a nutritional deficit in the peasants due to being overweight.
