Obtaining an industrial agricultural product implies waste or sub-product generation that represents an environmental problem. Because of inadequate management, sub-products are thrown to dumpsters, producing methane, one of the main greenhouse gases during their decomposition process, besides being a source of carbon for microorganism proliferation. These sub-products are generated in large volumes at national level, and only is a minimal part reused in the production of low value-added animal feed. Mango fruit sub-products (skin, seed, and pulp adhered to both) constitute from 35 to 60 % of fruit total weight, which have been reported to have an important concentration of bioactive compounds; particularly important are polyphenols, carotenoids, vitamins A, C and E, which could be high value-added ingredients of growing interest in substituting synthetic antioxidants by natural ones. Therefore, the objective of this research was to assess antioxidant activity and concentration of some bioactive compounds of pulping sub-products of three mango cultivars.
