Abstract

In this test the effects of globalization on the transformation of food culture is exposed, which has caused loss of prehispanic culinary roots. This, with the intention to discuss and disclose whether such an anomaly has led to the loss of the eating habits and how this change affects the health and quality of life of people. The need to rescue food identity and explain the importance of awareness and nutrition education as a prerequisite to achieve a better standard of health is highlighted.
