Objective: to study the feasibility of installing the corn-dough-tortilla agrifood system in the central region of Puebla, with corn producers as suppliers, with an improved grain that has favorable attributes for making quality tortillas. Methodology: the interviews with corn producers and tortilla manufacturers and two-years operations monitoring produced information about the system. The system is mapped with its members in order to estimate some economic indicators. Results: linkages were found between producers, collectors, and industrialists, that are supported by communication and agreements that ensure its functioning as a system. Value: from a white bean resulting from research in situ, homogeneous and with a conversion rate of 1.8, a positive benefit-cost ratio is generated for producers and industrialists. Limitations: it is necessary to expand the coverage of the study beyond the group of producers and industrialists in this region of Puebla. Conclusions: the actors’ common interest, the feedback, communication and agreements, make the agrifood System viable in this region.
