Abstract

Tenate cheese is made by craftsmen in Tlaxco, Tlaxcala, for a hundred years or so. Unfortunately, in recent years there has been a gradual process of extinction, something that takes place in his absence in local markets. The factors that are resulting in the disappearance of cheese are complex and largely unknown, their understanding is of great importance to design and implement strategies to rescue and valorization of this heritage food. In order to identify factors that are causing the disappearance of cheese tenate basket from a vision that would combine social, technical and economic, we used the methodology proposed by Grass, Cervantes and Palacios (2012) for Localized Food Systems (Syal).
