The paper explores and characterizes the pork and ovicaprine production chain based on trades in traditional production and marketing systems. It is a qualitative research of open codification from a theoretical approach based on the guide interview as an instrument. Based on the assessment of the different trades surrounding the pork and ovicaprine production chains, particular problems and perspectives are identified, such as the dismantling of production chains, which makes it difficult for workers to improve their product, the only means of survival. It is determined that those who carry out these works are unaware of their function within the productive chain and find themselves isolated with their problems.
