The present paper aims to show how the ethnic identity in a municipality of Jalisco, Mexico, has been built with the presence of migrants from Chiapas for working in the tequila industry. For such purpose, particular events have been traced, which for the author eventually reveal an "ethnic distillation process", metaphor used to explain the processes and dynamics that arise from the relations between two supposed culturally and racially distinct ethnic groups: indigenous migrants and native people from the High Lands Region.
