In the present work, anthocyanin from red cabbage was extracted using 50 % ethanol. The extract was dealcoholized by the liquid emulsion membrane technique. Kerosene was used as a solvent; Span 80 was used as a surfactant and water as a stripping medium. The parameters affecting the efficiency of the liquid emulsion membrane were optimized using the response surface methodology (RSM). Design-Expert version 13 was used to perform the statistical analysis. A second-order polynomial equation was fitted to experimental data by regression analysis (R2 =0.93). Response surface plots were analyzed and optimum parameters for dealcoholization were found to be agitation speed during extraction = 200 rpm, agitation time =16.46 min, concentration of Span 80 =2.79 %, volume ratio of emulsion to feed =2.83. A maximum dealcoholization of 16.28 % was observed under these optimum conditions.
