In this work a microbiological study of pulque, a tradicional Mexican alcoholic fermented beverage, was carried from four different times of fermentation. We studied the different populations of Saccharomyces sp, Zymomonas sp and Leunocostoc sp and we evaluated the different concentrations of sugar, proteins and ethanol. A simple, accurate and quantitative analysis method based on Raman spectroscopy, for determination of different level of ethanol content in pulque has been developed.
