The economicist vision adopted in Mexico assumes excessive importation of food, an abandoned countryside, malnutrition, and dependence on other countries to generate the food the nation consumes. The state has renounced the common good, lacking a vision of its own sovereignty and food security. In this context, universities can be catalysts of change with a systemic focus, by taking a more active role in encouraging a sustainable vision that protects biological and cultural diversity, and considers the production systems and food consumption patterns that are already established in Mexico. In this article we propose the analysis, structure, and development of a training system in public universities that enables making progress toward integrated practices of consumption and interaction.
